Ingredients | Dark Blue Colour Cupcakes⅓ cup small pearl tapioca2 tablespoons chia seeds1 ½ cups water4 cups coconut milk1 cup palm sugar½ cup cocoa powder3 tablespoons arrowroot powder½ teaspoon salt1 teaspoon vanilla extractDirectionsCombine tapioca and chia seeds in a pot and cover with water; let soak until thickened and gelatinous, at least 1 hour.Mix coconut milk, palm sugar, cocoa powder, arrowroot powder, and salt into tapioca mixture; cook and stir over medium heat until desired thickness is reached, 10 to 15 minutes.
